High-fructose corn syrup (HFCS) is a liquid sweetener utilizing a modified form of corn syrup, which is also an alternative to sucrose used in the food and beverage industry. The high and fluctuating sugar prices, along with the ease of using HFCS in the beverage industry, has almost replaced sugar in the beverage industry. Although current world sugar prices have largely dropped from the 25-year high, the market remains particularly susceptible to large demand swings and price volatility. Generally, international sugar prices have generally trended downward, as the production of traditional importing countries increased, largely due to domestic support measures. HFCS-55 was strategically designed to have the same relative sweetness as sucrose, so it could be easily substituted for sucrose in foods and beverages. HFCS-42 has a lower relative sweetness, directly attributable to its lower fructose content.
