The North America stevia market was valued at USD 136.91 million in 2016 and is estimated to grow at a CAGR of 9.19% during the forecast period, 2018-2023. Consumers have started showing interest in knowing the ingredients present in their foods, thus demanding clean label products. Most of the food manufacturers are responding to this new trend among consumers by developing products with lower sugar and lower calorie content and that are natural such as stevia.
Rising Demand for Low-Calorie and Natural Food Products

The demand for clean label or natural food products is rising due to growing consumer awareness towards health effect of artificial ingredients. Stevia is the only natural high intensity sweetener that fits best to zero/reduced calorie or no calorie food products. The new product launch focusing stevia is trending in the sweeteners market to address growing obesity. As per the industry leader Cargill, during 2012 to 2013 stevia sweetener was used in 1200 products of which, 700 products were launched in 2013.
Stevia has struggled over the years for regulatory approval for its safe use in food & beverage product. It is one of the most controversial food ingredient due to its ban by regulatory bodies and re-approval. FSSAI has approved its usage as food additive in Nov 2015 which is driving the stevia based product market.

Powder Stevia is the most used by form

Since extracted stevia powder is so intensely sweet, it serves the sweetening purpose appropriately. The white powdered extract form in which stevia is primarily used as a sweetener is approximately 200 to 300 times sweeter than sugar. The liquid form of stevia has been used in quick recipes. Liquid stevia flavours are strong, especially in a no bake recipe.
For commercial scale application, liquid stevia is preferred, as they are concentrated and very less quantity is required. Demand for Alcohol free liquid stevia is growing at a greater pace. Stevia is widely used in various applications where bakery holds a prominent share of 23% in North America.

U.S Dominated the North America Stevia Market

The increasing number of diabetic consumers is also a driver for the consumption of stevia and US has almost 29 million diabetic people. This number is expected to grow further in the future. Most prominent beverage companies such as Coca Cola and PepsiCo in U.S have already incorporated stevia in their beverages as a sweetener. Stevia is not considered safe is various countries, but the Canada and Mexico government health associations added stevia as to its list of permitted sweeteners to be used as a table top sweetener this incased the consumption. Powered stevia accounted for about 63% of the total revenue in 2016 in Canada.
